1. Get Proper Tortillas
Just like how the backbone of a great sandwich is the bread, the key to top notch tacos are the tortillas. Seek out the best tortillas in your area (a google search for a “tortilla factory” may surprise you) or go online.
2. Soften Up The Tortillas
Place your tortillas in a skillet for 30 seconds a side to warm them through so they are pliable and keep your tacos hotter for longer.
3. Double Stack
There’s a reason you see your local taco truck double stack tortillas, it holds everything together and prevents ingredients from falling through in the event of a tear.

3 Lbs. Chicken Thighs and Legs

Radish (Sliced Thin)
8 6" flour tortillas, warmed
1. Cover chicken pieces with water and 1 tablespoon of salt. Bring to a simmer and cook until chicken is done, about 25 minutes. Remove chicken and pull meat from bone.
2. In a medium sauce pan, add jar of mole paste to one cup broth or water, stir and simmer over low to medium heat until fully blended for 2–4 minutes.
3. Add chicken and simmer with sauce for 2–4 minutes.
4. Fill tortillas with mole, top with pickled onions, radish and serve with a cold beer!

6. Tacos Need Crunch
Shredded Cabbage, Sliced Radish, crisp white onion. A good taco is a symphony of textures, make sure you don’t leave out the crunch!
