Butchers Are Rarely Wrong

If you’re ever unsure about where to find a good meal in an unfamiliar town, go to the central market, pick a crowded lunch counter and grab a stool. The man next to me had forearms as big as my thighs and was donning a blood soaked butchers apron, so I pointed at his dish and gestured “I’ll have what he’s having”. I later discovered this is called “Birria de Res” a fiery Mexican stew of goat meat, chiles and cilantro. Butchers are rarely wrong.
