Every time I go to Flushing, I feel like I’m going to the Six Flags of food. A theme park of slurping, sipping, burn-inducing flavor hits. Choose your ride, from xiao long bao to dry hot pot to Lanzhou noodles, it’s an Adventureland of palate assaulting flavors. The food courts feel like the ones overseas, tight-packed, stall after stall of independent operators who usually do one to two dishes well. You come to Flushing to get lost, coming from Manhattan it feels a bit like a flavorful trip to Mars.

I have two simple rules to finding good food:

1) Follow the lines.
2) Stare at people’s plates.

Lunch lines mean the place matters and one glance at the plates and it becomes obvious what the joint is known for. One day you wake up and you’ve traveled to lots of different places and you realize that there’s also a whole unexplored world right in your backyard. No need for airport lines, check-in booths or hotel bookings, just a stroke of curiosity and willingness to have what they’re having.
