From Oaxaca With Meat

In March, I was in the bustling central market of Oaxaca, Mexico where there is a section that looks like the meat locker scene from Rocky but you can grill anything you see on the spot. Hanging from the rafters like hockey jerseys were fresh chorizo sausages, thin-pounded sheets of local beef and air dried tripe, just point and the butcher will have it over an open flame in 10 seconds. It’s the most overwhelming, carnivore-centric environment I’ve ever been in and it’s just plain fun. Grilling means a lot of things in a lot of different countries but the common theme seems to be grab a cold drink, good friends and savor the weather while it lasts, so we hope you do that.
