Mexican Grilled Corn | Street Food Mantry
Ingredients
4 ears shucked corn
½ cup mayonnaise
1–2 tablespoons Olo’s Chipotle Paste
1/2 cup finely crumbled cotija or feta cheese
fresh lime
red chili powder (such as ancho or guajillo)
Directions
1) Grill corn until cooked through and charred in spots on all sides.
2) Mix mayonnaise, Olo’s, crumbled cheese and spread on corn.
3) Sprinkle with chili powder, serve with fresh lime.
