Things Were Different Here

This is the first dish I had the first time I went to Europe. It was in San Sebastian, just a simple plate of fried local porcini with a raw egg yolk, in a crappy sports bar. I swirled it all together, took a bite and realized things were different here. Effortless, two ingredient perfection and something you would never find back home unless you went to a “fancy” restaurant, maybe.
